Chocolate Mint "Soup"



This was actually intended to be a smoothie, but I often like to sit down with a bowl and spoon and take my time with it, otherwise I just drink it way too fast.

Simple recipe here...

One Thai Coconut from Chinatown

Two Tablespoons of Raw Cacao Powder (Raw Chocolate Powder)

Some Coconut oil (add as much as you need to reach your desired level of "creaminess"

Sweetener, such as Agave Nectar, Raw Honey, or Yacon Root Syrup. Also maple syrup would work, however it is not raw. Again, put some in...taste a little. Not sweet enough for you or your loved ones? Add a little more! The #1 rule is that there ARE NO rules, just some rough guidelines. You fiddle with it until you are happy.

And then about 10 mint leaves. I use Chocolate mint, that I purchased from the Union Sq. Greenmarket. I would just buy a potted plant for $8, and that way it makes your room smell nice, and you will continue to get the freshest mint available. Just make sure to water it every 3 days at least. If it needs water, the leaves will start to droop.

So...add this all in and blend away! If you arent using a heavy-duty blender like a Vita-mix, you might have to let your blender do its thing for about 4-5 minutes. Don't worry, I havent burned out a blender yet, and I do this quite often. Just keep checking every now and then to see where your mixture is at as far all being smooth and silky.

You could also add in some cashews or macadamias to give it that extra creamy texture. Just experiment and have fun with it. This lifestyle of eating is FUN! You get to play around and tweak it to your likes. Be active with it and see where it takes you.

Put a little sprig of mint on top, and maybe some cacao nibs to give it that extra pizazz.
